Prickly Pear Syrup

2 cups prickly pear juice (from cleaned and processed prickly pears)
1/2 cup water
1/2 cup sugar
2 tbsp lime juice

Pour all ingredients into a saucepan.  Bring to boil. Constantly stir for 2-3 minutes.  Take off heat. Allow to cool. Pour in clean jar with lid and refrigerate. Good for 1 week.

Prickly Pear Margaritas for 4

2 oz triple sec
4 oz tequila
2 oz prickly pear syrup
Add the above to a blender with 3-4 cups ice for blended or just combine and pour over ice.  Rim glasses with salt if desired. Serve, drink up and yell Olé!!
