non-dairy creamer & cold pressed coffee

I’ve been making cold-pressed coffee ever since it started being so hot.ย  I used instructions from HERE.ย  I’ve also been making my own non-dairy creamer. It’s made with cashews and it’s super creamy and great in coffee or tea. A Perfect afternoon pick-me-up.

Cashew creamer (makes 1 1/2 – 2 cups)
1 cup raw cashews
1-2 cups water
1-2 tbsp agave nectar
pinch of cinnamon (optional)
2 tsp vanilla

Put cashews in a jar or container and fill with water so that water covers cashews by a couple of inches. Cover with lid and let soak over night (or at least 6 hours). After soaking, drain and rinse. Place cashews in blender with 1 cup water and blend until completely creamy. Add more water, 1/4 cup at a time, until desired consistency. Add final ingredients to taste. Blend to combine. Refrigerate ~ last for up to a week (if it lasts that long). Enjoy!

  4. between my husband and I, the creamer lasts for about 3-5 days. I would say it doesn’t last longer than a week. Definitely refrigerate it. ๐Ÿ™‚

  7. Ok, so I made the cold press coffee. It was so good, but I drank about two sips (seriously) and I was flying on the caffeine! What a wimpy coffee drinker I am! Going to have to work on my coffee to water/milk ratio to tone it down for wimpy little me! LOL!
