Last day of winter chai latte

chai latte

I’m a little sad that today is the last day of winter.  The start of spring means that HOT temps are right around the corner.

I do still love spring, the flowers and fruit! Yay fruit!!

chai latte

To mark this day, I made my favorite winter drink. I might have to convert this into a cold drink by adding ice. Yes, that sounds really nice!

I love my chai lattes to have a really good spicy kick and not be too sweet. The ones that you get at many coffee shops are always WAY too sweet with a very mild hint of ginger and cinnamon. The cashews in this recipe add more creaminess than almond milk alone.

Here is my recipe (serves 2):

1 1/2 cups of warmed milk (I use unsweetened almond milk)
1 1/2 cups hot water
2 black tea bags
1 tablespoon grated ginger
1/2 tsp cardamom powder
1 tsp ground cinnamon
1-2 tsp agave nectar (or more to taste)
1/4 cup soaked raw cashews
a sprinkle of both salt and pepper

1. warm milk in microwave or stove top
2. Steep the tea bags in hot water for 2-3 minutes then discard tea bags.
3. Combine milk, tea and all other ingredients into blender and blend until smooth and creamy.

Notes:
*I use one tea cup to warm the milk in the microwave and one tea cup to steep the tea. Use these same cups to serve.  This help with decreasing dish washing.
*I prefer PG tips for my black tea.
*You can decrease the ginger by half if you do not want it too spicy.
*The pepper adds to the spice (can be omitted) and the salt brings out all of the flavors (also can be omitted).
*The cashews need to be soaked for at least one hour if you are not using a high powered blender.

This looks delish! Brilliant way to make a vegan latte! Can’t wait to try it out tomorrow morning.

  2. Yum! I like the idea of the cashews in tea. I’m going to try that with my tea. Happy spring. 7:12 just passed, so it’s official! 🙂

Looks and sounds yummy! A friend of mine from India just gave me a bunch of cardamom pods and I’ve been wondering what to do with them ~ this is it! I love PG Tips too ~ the coffee shop I go to has it as their black tea. Next time you’re in Portland, you’ll have to check it out ~ Oui Press on Hawthorne.
    Happy Spring to you!

Ooohhh… I think I will have to try your recipe – thanks for sharing! As for winter, I’m quite excited for it to be gone…it’ll still be a while until we see green grass – and I’m sure we will have another dump of snow before too long. Isn’t it interesting how different this world is! I could kill for some heat right about now. 🙂
