I made this the other night for dinner. The filling is tofu sauteed with onion, garlic, basil and spinach. Whizzed the filling in a food processor a couple of times then filled jumbo sized shells, topped with sauce and vegan cheese. It was delicious! Even my 11 month old couldn’t get enough of it!
This looks great! I really need to try more tofu fillings in pasta! Thanks for the inspirations!
