On eating cheesecake and being ill

Ill, not because of the cheesecake.  No, probably because we are scheduled to be hiking down the Grand Canyon on Wednesday.  Yep, that’s our luck, me and the hubby are both sick.  We are trying so desperately to get better by Wednesday.  We’ve been looking forward to this trip for so long.  And my hubby’s birthday was a few day ago, hence the vegan cheesecake.   He was sick for that too. I tell you, it is much easier to take care of sick children than it is taking care of children while being sick!

The cheesecake, on a very happy note, was incredibly good.  Best vegan cheesecake I’ve ever had.   I found the recipe here, and since it is VeganMoFo (Vegan month of food)I thought I’d challenge myself with making a vegan cheesecake for my hubby (it’s his favorite). In the past, trying to make a vegan cheesecake has always been a disaster. This time it was most definitely not. VeganMoFo, by the way, is the celebration of being vegan, which I very happily am.  It follows the very recent World Vegetarian Day. So, if you can, try adding more vegetarian meals to your diet.  It’s good for the planet and for your health.

    That looks divine! I hope that you are feeling better in time for your Grand Canyon Hike. We should definitely plan a craft night when you get back and are feeling back to normal; that would be so fun!

    Hi Regina! I haven’t been by for a visit in ages… hope you’re all feeling all better by now :> That cheesecake looks so delicious. We were in NorCal over the summer and had the pleasure of eating at Cafe Gratitude several times – the most amazing vegan live foods! They have a cookbook – I Am Grateful: Recipes and Lifestyle of Cafe Gratitude – that has some very delicious vegan deserts. We really liked the key lime pie. Hope you had a great hike!
