A day of baking and food making

I have been madly baking food and making easy salads in preparation for a big family reunion/camping trip at Bumblebee Ranch in central Arizona.  It’s with my husband’s side of the family.  Being that we are one of the only vegetarian families (plus one cousin), I have to do lots of food prep to ensure that we are all happily filling our bellies with good vegan choices.

I’ve made banana bread and pumpkin muffins for breakfast, Orangette’s butternut squash salad, PPK’s corn and edaname bean salad and quinoa,mango and black bean (I used pinto) salad.  All healthy and yummy.  I also made hummus and baba ganoush to go with pita chips for snacking and some peanut butter oatmeal cookies. We threw in some garden burgers, veggie dogs and portabella mushrooms for grilling and we are all set. Phew!! (click on the links to see the recipes I used)

I’ll be back on Monday with lots of exciting stuff planned for May.  Some BIG, BIG stuff happening and I can’t wait!!!  Throughout the month of May, I’ll being having a giveaway, sharing some interesting recipes and a tutorial as well as weekly updates to my sadly, almost empty shop.  Art prints will be the first thing going in next Monday!!  I have a fancy new printer and I’m so excited to finally be able to share some of my art with you.

    I sure hope you all have fun! I know the energy that goes into food prep for vacations and such. Although we’re not vegetarians we are gluten-free…not an easy one to tackle on the road!
