It keeps getting better and better every week. Week two was almost the same as week one, but with added spinach and bok choy. This week we got some spinach, kale, bok choy, braising greens, spring mix, fava beans and baby purple onions. We’ve been doing really well with eating everything we get. We still have some arugula from last week, but it still looks fresh and yummy.
Now, I’ve never had fava beans before. We’ve been munching on them right out of the pod, but have no clue what else to do with them. Any ideas? I’ve got 2 lbs of them!

may be you would like to cook the beans with tomato sauce (onion, garlic, tomato, salt, rosmarin).
try vegetarian times website. They had a recipe for fava bean burgers/patties I wanted to try but couldn’t find the beans!

I actually picked up one of your moo cards at the craft fair at Bentley’s; I wish that I would have introduced myself… I was in a big rush that day.
My husband and I have been thinking of joining the CSA, but do you think that it would be too much food for just two people? We might have to find someone to split the share with.
Also, I’ll check back to see your yard progress! We bought a house last year, too, and are done with the inside stuff, but dreading the outside work. I’ll need some inspiration!

I have never tried fava beans but remember seeing fava beans in Martha Stewart Living. http://www.marthastewart.com I searched on the website and found many fava bean recipes.
