a mouth full

I’ve been lazy.  I have lots to post about, but can’t tear myself away from dvds of Arrested Development. We are finally in the third season, so maybe I’ll be able to get some stuff done soon. The couch potato thing has been tying in nicely with my new work out regimen, seeing that I’m too sore to do much else.

I decided I was going to make working out more of a habit.  It was a huge habit a couple of years ago and now it’s been so sporadic.  I need it.  I know I do. I just keep forgetting.  I made a grid like schedule to get me started.  It’s working so far (only 3 days in).  I’m feeling motivated to get the days marked off as I go, which I like.  I figure, after a month or two, maybe I’ll be back to my old exercising self, that doesn’t need a schedule.  We’ll see.

I made this yummy soup.  It’s a hearty, filling, feel-good soup.  I call it Southwestern Black Bean, Barley and Sweet Potato Soup.  See, a mouth full.

1 tbsp olive oil
1/2 onion, diced
2 carrots, diced
2 cloves chopped garlic
1 tsp cumin
1 tsp dried oregano
1 tsp chili powder
1 tsp onion powder
1/2 tsp paprika
1/2 tsp turmeric
8 cups vegetable broth
1 cup diced sweet potatoes
1 cup barely, uncooked
1 can diced tomatoes
2 large bay leaves
red pepper sauce (Tabasco) to taste
1 can black beans, rinsed
1/2 cup frozen corn

In large soup pot, saute onion and carrots in oil for 3-5 minutes on medium heat. Add garlic, cumin, oregano, chili powder, onion powder, paprika and turmeric.  Saute 2 more minutes. Add vegetable broth, sweet potatoes, barley, tomatoes, bay leaf and red pepper sauce. Bring to a boil then turn down to a simmer stirring occasionally, for 30 minutes. Add corn and beans and continue to simmer for an additional 30 minutes. Serve and enjoy. Tastes even better the next day.

    I love Arrested Development! Such quirky and unique show. Such a shame it was cancelled.

    Gosh, something must be going around . . . or could it be that after the hubbub of the holidays, our minds and bodies are just exhausted? I too have been feeling lazy and just wanting to watch episodes of home design shows (if I can ever get my second half to gather up my enthusiasm for home improvements right now!).

    That said, thanks for sharing the stew recipe! I am trying to eat healthier in the new year too. I’ll definitely have to try this one.

    Thanks for the great recipe. We’re not a vegetarian household, so I used half veggie and half chicken broth. It works just as well with cannellini beans and weirdly enough, I could only find organic whole grain barley within a 2-block radius of home. A nice chewy addition. Yummmm!

    The soup looks fantastic!!! And don’t you love AD?? It’s one of the best shows EVER!! Hubby and I quote from it ALL the time and I routinely greet my brothers with a “Hey Brother” or “Hey Hermano”…did you hear a movie might be in the works? Wouldn’t that be awesome!
