Valentine’s Day Dinner

I forgot to share the yummy dinner I made for my hubby and boys.

I had to make it a heart healthy meal because I love my guys so much. It’s Spiced tomato and roasted corn soup garnished with tortilla chips, diced avocado and tomatillo salsa served with a side of spinach and romaine lettuce salad. Everyone gobbled it all up! It is now suspected that tomatoes are among the healthiest foods. It is packed with phytonutrients such as the important cancer fighting beta-carotene and lycopene. The tomato, fresh or as tomato sauce, juice, or paste, contains more of it than any other produce!
