Midweek Munchies

Just a small list this week of a few new meals I’ve tried over the last couple of weeks and a few items that I love. I’ve been trying to keep my meals simple lately because I never know when I’m going to have to pack everyone up and go in the back yard so that someone can see the house. Plus, it’s getting warmer and I haven’t felt like turning on the oven much. We’ve been eating a lot of salads, wraps and veggie/vegan burgers.

Red Lentil Sauce over Fettuccine

Potato Crumble Enchiladas w/ Spanish Rice and Mango Salad

Spinach Noodle Soup (made on a particularly cold day)

Chickpea, Squash, and Tomato mix-up served over whole wheat pasta

Pictured above is a pink smoothie made with: 1/2- 1 cup almond milk, 1 small banana, 1 cup frozen strawberries, 4oz soy yogurt, 1 tsp vanilla, agave nectar to taste, and 1 tbsp wheat germ. Blend all ingredients in blender and wha-la! Very very yummy. The boys loved it!

Kashi Autumn Wheat Cereal. My new favorite cereal! It’s organic and only has a few ingredients. Lightly sweetened it’s very yummy with Silk.

Agave Nectar I’ve been buying this for quite a while. It’s a great alternative to honey. I mostly use it for sweetening my tea but it’s great for sweetening other things as well.

Bear Naked Vanilla Almond Crunch It’s a very tasty granola mix, perfect for yogurt, a snack or as cereal with soy milk.

Melissa’s Soyrizo I love making this with diced yukon gold potatoes, then using it as a taco or burrito filling with all the usual garnishes. Very tasty!

  2. Spinach noodle soup looks awesome! As well as the red lentil sauce over fettucine….I would like to make that!!!
